Housed in a heritage-listed 1930s bathing pavilion on Williamstown beach, Sebastian is a love letter to the Basque region of Spain — its food, its culture, and the world-renowned dining scene of San Sebastian itself.

We char grill and smoke our meats, seafood, and vegetables over open flame - a nod to the soul of Basque cooking, where fire does the talking. Alongside, an extensive drinks list of local and European beverages is carefully chosen to pair beautifully with every dish.
